The Ordinary Vegan - Birds Eye Rice Fusions


Birds Eye Rice Fusions come is a variety of flavours, many of which are vegan. They are microwave pouches of rice, vegetables and seasoning which can be steamed in a few minutes and eaten as a snack or as a side dish with a meal. They are available in most supermarkets for around £1.75 but are often on offer for £1 or 2 for £2, in the freezer department. They contain no artificial colours, flavours or preservatives and are great for a quick meal when you don't have time to cook.

Vegan Recipe of the Week - Summer Sandwiches - Mexican Wrap

Mixed Beans with homemade Spicy Salsa, Lime Rice and Guacamole in a Soft Tortilla Wrap




For the Lime Rice:

Ingredients:

100g red rice, steamed
2 Tbsp fresh coriander, chopped
½ lime, zest and juice
salt and pepper to taste
dash of olive oil

Method:

Steam or boil the rice until cooked and then grate the zest of half a lime into the rice and stir. Add in the lime juice, olive oil, salt, pepper and coriander and stir well. Spoon into a bowl.


For the Guacamole:

Ingredients:

1 ripe avocado
1/3 red onion, chopped finely
½ -1 green chilli, deseeded and finely chopped
1 small plum tomato, finely chopped
1 Tbsp coriander, finely chopped
2 tsp lime juice
Sea salt and freshly ground pepper to taste
1 Tbsp of soya cream (optional)

Method:

Cut the avocado in half and remove the stone. Scoop the flesh from the skin into a bowl.
Mash the avocado with a fork until smooth. Add the rest of the ingredients and stir into the avocado. Add the soya cream if you like a creamier consistency and flavour. If not using immediately, cover with cling film directly onto the surface of the guacamole to stop it browning. Can be refrigerated for 24 hours.



For the salsa:



For the sandwich - serves 4:

Ingredients:

4 large soft flour tortillas
A tin of organic mixed beans
Lime rice
Salsa
Guacamole



Method:

Warm the tortillas in a large dry frying pan.
Spread a layer of guacamole along the centre of each tortilla.
Top this with a layer of salsa.
Add a few spoonfuls of mixed beans followed by a few spoonfuls of lime rice.
Roll the tortillas up folding in the sides as you go.

Cut in half before eating.

Vegan Vox Reviews...Amy's Kitchen Rice Mac & Cheeze


I love Mac'n'Cheese. I missed it so much when I became vegan. Sure, I have made cheesy style sauces with nutritional yeast, but they never tasted quite like the real thing. Then I found Amy's Kitchen Rice Mac & Cheeze and I'm back in love!




The texture and taste are spot on, the sauce is the right thickness and creamy. It's made using Daiya cheese from the USA and is gluten-free and soy-free too! It is also Vegan Society Certified. The only downside is that is it expensive - around £3 for a small portion, which would only serve as a side dish or a snack. Obviously you could make your own for much cheaper, but this wins on the taste front.

The Ordinary Vegan - The Food Doctor - Chipotle Chilli Wholeful Grains


I found these snacks at Home Sense but Food Doctor products can be found in many health food shops, supermarkets and online as well. 


These are a great vegan snack to keep in the car for a long journey, to take to the cinema or to keep you going at work. It's full of healthy grains and seeds - including pumpkin seeds, corn, broad beans, soya beans, black beans, brown rice, almonds, peppers, peas, chillies, lime, herbs and spices. It is labelled as suitable for vegans on the packaging and sells for around £2.50 for a 150g bag.



They are spicy and full of flavour and make eating nuts and seeds more fun! They are a good source of protein and high in fibre. Food Doctor do a range of vegan-friendly snacks which are based on whole foods. What is your favourite go to healthy savoury snack to top your energy levels up until your next meal? Vegan Recipe of the Week- Ch'ken and Vegetable Jalfrezi


This is my 100th Post! Yay! So, as is traditional on Vegan Vox Blog every Tuesday, here is another tasty vegan recipe...

This is a super quick and easy vegan curry to make on a week night when you need something filling, warming and fast.

Serves 2-3

Ingredients:

2 Carrots
6 Green Beans
Half a packet of Chicken Style Pieces (I use Morrisons)
1 Large Onion
2 Cloves Garlic
1 Red Chilli
1 Tin of Plum Tomatoes
1 Tbsp Apple Cyder Vinegar
1 Tsp Turmeric
1 Tsp Dried Coriander
1 Tsp Cumin
1 Tsp Chilli Powder
1 Tsp Curry Powder
2 Tbsp Tomato Puree
1/2 Pint Water
Olive Oil







Method:

Peel the carrots and slice. Cut the beans into quarters.


Put the carrots and beans into a pan of salted water and bring to the boil. Simmer for 10 minutes then drain and set aside.



Put the garlic and onion into a food processor and pulse until finely chopped. Remove the onions and garlic and put to one side. Place the tinned tomatoes and chilli into the food processor and pulse until smooth. 



In a pan, heat some olive oil and add the onion and garlic and stir fry for a few minutes.


Add the chilli and tomatoes to the pan and stir in.


Next add the apple cyder vinegar, tomato puree, herbs and spices to the pan and stir in well.


Add the Chicken Style Pieces to the pan and stir to coat them with the sauce.


Next add the water and bring the sauce to the boil. Simmer for around 5 minutes. Then add in the drained vegetables.


Stir regularly and simmer for around 10 minutes until the sauce has thickened and the chicken style pieces are cooked through.



Once the sauce is thickened serve immediately with your favourite steamed rice.





This curry keeps in the fridge for 48 hours and can be frozen. I often double the quantity and freeze the extra portions for another day.

The Ordinary Vegan - Inside a vegan kitchen

Many new vegans or those contemplating becoming vegan wonder if you need to buy lots of new products or fancy equipment in order to live a vegan lifestyle. So this week's The Ordinary Vegan is a bit different. I am going to show you around my kitchen!







Let me start by saying that the only thing you need in a vegan kitchen is a good chopping board, a set of good knives, a cooker and lots of fresh vegetables, fruit, grains, seeds, pulses, herbs and spices. Everything else is a choice. I love kitchen gadgets and so have more than most, but I spend most of my time in the kitchen making food, photographing food or writing about it!

These are my store cupboard essentials:

A range of oils, spices, vinegars, seasonings, nutritional yeast and stock cubes.


A range of tinned produce, vegetables, beans, lentils, chopped tomatoes and a quick veggie chilli if I'm feeling too tired to cook.


I have a savoury and sweet snack cupboard with naughty vegan treats in like nuts, crisps, crackers and biscuits.


A huge pile of cookbooks for meal ideas and inspiration. These don't need to be vegan cookbooks, many recipes can be easily adapted for a vegan diet.


In my fridge, I always have some non-dairy milk and butter, usually some vegan cheese, salad and lots of sauces. There is usually a tub of leftovers in the fridge for a quick lunch and some Jus-Rol pastry for quick and easy pies. Ooh, there's always a bar of dark chocolate in my fridge for when only dark chocolate will do!




In my freezer, I always have my own vegan ready meals. I always cook in large batches and freeze portions for after a hard day at work. You will often find some dairy-free ice-cream, homemade bread rolls and a few vegan burgers or sausages in my freezer too along with some frozen vegetables.



Moving onto my kitchen gadgets. I have a blender for soups, smoothies and sauces. A radio to listen to whilst I'm cooking and washing up! :-)


A food processor for breadcrumbs, pesto, salsas, chopping nuts, seeds, onions, and to use in baking. 


A bread machine. I love my bread machine and I make all of my own pizza bases, bread rolls and loaves. Often I use the dough setting to do all of the kneading and mixing and proving and then bake in the oven for a lovely finish.


 A pestle and mortar - I use this to grind herbs and spices, make dips and grind seeds and nuts.


 The slow cooker is great for casseroles, soups, curries, stews and marinades.


Finally, a mixer. I do a lot of vegan baking in my kitchen and a good mixer makes light work of it!
