Strawberry Oat Bakes with Chocolate - Recipe

Hey there,

It's been a long time. Most of my days now are spent running our vegan streetfood business - The Vegan Grindhouse. If you don't know who we are, click on the link and go and find out! We travel the UK selling handmade vegan burgers at markets, festivals, concerts, weddings, parties, events and more. We are available to hire as well.

Well today, I had a very rare day off, due to an event being cancelled and so I thought I'd do a new recipe for the blog as it has been too long.

A few days ago, I was sent a hamper of Free From items from the lovely people at Sainsbury's to try out and let them know what I thought, so I decided the best way to use them would be bake something, as baking is one of my favourite things to do!

Here are the items Sainsbury's sent me to try:









All of the items were clearly labelled vegan which was great and the almond milk is fortified with calcium and vitamin D. I decided to make a strawberry oat bake with chocolate and have a slice with a glass of the milk. Perfect afternoon treat. This item is gluten free also.

Here is my recipe (Makes 6-8 slices):

50g light brown soft sugar
125g gluten free plain flour (I used Dove's Farm plain flour)
1/2 teaspoon bicarb of soda
100g gluten free oats (I used Deliciously Free From Pure Oats by Sainsbury's)
1 teaspoon vanilla extract
1 tablespoon golden syrup
125g vegan butter alternative (I used Pure)
1/2 jar jam (I used Sainsbury's Taste the Difference Strawberry Conserve)
100g vegan chocolate (I used Deliciously Free From Choc Bar by Sainsbury's)

Method:

Preheat the oven to 180C/160C (Fan)/Gas Mark 4

Grease and line a 20cm square cake tin

In a mixing bowl stir together the sugar, flour, bicarb, and oats until combined.

Then add the vanilla extract and golden syrup and stir through the dry mixture.

Rub the butter alternative into the dry mixture with your finger tips until the mixture resembles crumble.

Pour three quarters of the crumble mix into your prepared tin and press down into the tin with the back of a metal spoon.

Spoon the jam onto the base and spread all over with a pallet knife.

Sprinkle the remaining crumble on top of the jam and press in lightly.

Bake in the centre of a preheated oven for 40 minutes until golden brown.

Remove from the oven and leave in the tin on a wire rack for an hour to completely cool.



Next, break the chocolate into pieces and place into a glass bowl over a saucepan of just boiled water. Stir until the chocolate has melted. 

Drizzle the melted chocolate over the top of the strawberry bake and pop in the fridge for 20 minutes until set.


Slice the bake into 6-8 slices and enjoy with an ice cold glass of almond milk.





Put your feet up and relax, you've earned it!

Vegan Recipe of the Week - Super Quick Pitta Pizzas


Super Quick Pitta Pizzas are easy to make, taste great and are a quick meal when you've had a long day at work. They are fun to make with children too and taste lovely.

Makes 2 pizzas:

You will need:

1/2 jar of sundried tomato pesto
1/4 packet of veganic pizza cheese
1/4 red bell pepper, sliced
4 cherry tomatoes, quartered
2 wholemeal pittas
2 portobello mushrooms, sliced
1/4 red onion, diced
a few strips of smoked tofu
1 tsp olive oil











Fry the onions and mushrooms in the olive oil over a medium heat whilst the pittas are in the toaster.


Once the pittas are lightly toasted, spread with the tomato pesto.



Next add all of the chopped veggies, the fried veggies, the tofu and the cheese.



Place under a pre heated grill for 3 minutes to melt the cheese.

Vegan Recipe of the Week- Shortbread

I love shortbread, it is so easy to make and you can use it as a base for lots of variations.



Here is my recipe:

125g Hard Stork in the foil packet
60g Caster Sugar
180g Plain Flour
1 Tbsp Vanilla Extract
pinch of salt

Preheat the oven to 170C fan/190C conventional.

Cream together the sugar, vanilla and margarine until smooth, then sieve the flour into the creamed mixture, add the salt and work together until in forms a soft dough.

Roll the dough out until it is around 1/2 inch thick and cut into fingers, circles, stars, hearts or whatever you like. Sprinkle with caster sugar and prick with a fork.

Chill in the fridge for 30 minutes.

Bake in the oven for around 16-18 minutes until golden brown and then transfer onto a cooling rack.

Variations on the recipe include adding dark chocolate chips into the dough before rolling, adding chopped cherries or raisins to the dough before rolling or after baking drizzle with lemon or vanilla glace icing.

Vegan Recipe of the Week - Summer Sandwiches - Mexican Wrap

Mixed Beans with homemade Spicy Salsa, Lime Rice and Guacamole in a Soft Tortilla Wrap




For the Lime Rice:

Ingredients:

100g red rice, steamed
2 Tbsp fresh coriander, chopped
½ lime, zest and juice
salt and pepper to taste
dash of olive oil

Method:

Steam or boil the rice until cooked and then grate the zest of half a lime into the rice and stir. Add in the lime juice, olive oil, salt, pepper and coriander and stir well. Spoon into a bowl.


For the Guacamole:

Ingredients:

1 ripe avocado
1/3 red onion, chopped finely
½ -1 green chilli, deseeded and finely chopped
1 small plum tomato, finely chopped
1 Tbsp coriander, finely chopped
2 tsp lime juice
Sea salt and freshly ground pepper to taste
1 Tbsp of soya cream (optional)

Method:

Cut the avocado in half and remove the stone. Scoop the flesh from the skin into a bowl.
Mash the avocado with a fork until smooth. Add the rest of the ingredients and stir into the avocado. Add the soya cream if you like a creamier consistency and flavour. If not using immediately, cover with cling film directly onto the surface of the guacamole to stop it browning. Can be refrigerated for 24 hours.



For the salsa:



For the sandwich - serves 4:

Ingredients:

4 large soft flour tortillas
A tin of organic mixed beans
Lime rice
Salsa
Guacamole



Method:

Warm the tortillas in a large dry frying pan.
Spread a layer of guacamole along the centre of each tortilla.
Top this with a layer of salsa.
Add a few spoonfuls of mixed beans followed by a few spoonfuls of lime rice.
Roll the tortillas up folding in the sides as you go.

Cut in half before eating.

Vegan Recipe of the Week - Summer Sandwiches - MLT


Over the next few weeks on Vegan Vox Blog, I will be sharing a series of vegan summer sandwich ideas. Starting with a favourite in our house - The MLT (Mushroom, Lettuce and Tomato)

Ingredients:

A Portobello Mushroom
Beef Tomato, sliced
A Crusty Bread Roll
Tomato Salsa - see my recipe here
Sweet Gem Lettuce Leaves
Olive Oil

Method:


Slice the bread roll and spread the bottom half with the salsa and add the lettuce and tomato. Griddle the mushroom in a griddle pan with a little oil, turning over half way until cooked on both sides. Add the cooked mushroom to the sandwich, top with a little more homemade salsa and serve with a salsa dip or a few mixed olives.

Vegan Recipe of the Week- Breakfast Ideas

This week is a slightly different version of the VROTW feature. So many people ask me what vegans can eat for breakfast other than porridge or cereal with soy milk, that I thought I'd do a breakfast feature to offer some inspiration.

Monday



Start the week off with a delicious Oat Bagel served with dairy-free butter, jam and a banana.

Tuesday



Bake some delicious fruit muffins with banana, nuts or cranberries and have a muffin and coffee.

Wednesday



Grab some delicious fresh organic fruit and a Nakd bar for breakfast on the run.

Thursday



Keep it simple with fresh granary toast and baked beans with a little brown sauce.

Friday



Make some Jus-Rol Croissants and take them in for your colleagues - Friday treat time!

Saturday




Try a vegan sausage and hash brown roll or VBites Bacon and hash brown roll with a glass of chocolate almond milk.

Sunday


Make it a Sunday Brunch with a full English, vegan sausage and bacon, mushrooms, hash browns, granary toast and baked beans.

Special Days - Anniversaries, Birthdays, Valentine's Day etc.


Treat the loved one in your life to delicious iced cinnamon rolls freshly baked and served in bed with a glass of freshly squeezed orange juice. Perfect!
