Vegan Recipe of the Week - Homemade Jam Tarts

Making Jam Tarts is really simple and a favourite for when people come over to have with tea or coffee.

Makes 24 Tarts

You will need:

200g plain flour
55g cold vegan butter - I use hard Stork
55g Trex vegetable fat
3 Tbsp very cold water
A pinch of salt

or you can use Jus-Rol shortcrust pastry if you prefer

24 teaspoons of strawberry jam (my favourite jam recipe is here or you can use shop bought)

Frylight

Method:

Place the flour, butter, vegetable fat and salt into a food processor and pulse until the mixture resembles breadcrumbs. You can rub the fat into the flour by hand but you hands need to be really cold to stop it melting.

Slowly pour the water through the opening in the food processor until the mixture forms a ball or if making by hand stir the water in with a knife until the mixture comes together.

Wrap the ball of dough in cling film and chill in the fridge for around 30 minutes.

Once chilled roll out your pastry to around the thickness of a pound coin. Cut out rounds using a cutter slightly bigger than the baking pan holes.

Spray your baking pan with frylight and push gently each circle into the holes.

Spoon 1 teaspoon of jam in each pastry case and refrigerate for another 30 minutes.

Preheat the oven to 160C fan/180C/Gas 4.

Place the chilled tarts into the centre of the oven for 15 minutes or until golden brown.

Once baked, leave to cool for at least 30 minutes before eating as the jam remains very hot.

Eat and Enjoy!

The Ordinary Vegan - Mr Kipling Pies and Tarts

This week on TOV, I am looking at shop-bought bakery. It is so hard to find vegan items in the bakery aisle at supermarkets as this is traditionally where most of the products contain some kind of dairy or eggs. I mainly bake my own but if you are out and about or need something in for unexpected guests, Mr Kipling comes to the rescue as two of the main line of products are vegan-friendly.

The first is the Apple & Blackcurrant Pies. Strangely, the Apple Pies contain dairy, but the Apple & Blackcurrant do not! There are often other seasonal pies, mainly around Christmas, which sometimes are vegan too, last year they had a winter fruit pie selection which was vegan-friendly.

In addition to the pies, the Mr Kipling Jam Tart selection is also vegan-friendly and quite often both packets are on offer for 2 for £2 in the supermarkets. The regular price is around £1.49.

They don't taste as nice as home-made but they are tasty and they are good to have in the cupboard for times when you don't have time to bake.

If you prefer to make your own vegan food, come back tomorrow for the Vegan Recipe of the Week.

What are you vegan-friendly supermarket bakery finds? Let me know in the comments below.

The Ordinary Vegan - Jus-Rol Pastry

This week on TOV, I am sharing one of my fridge staples. Jus-Rol pastry comes in blocks of puff pastry, shortcrust pastry and filo pastry. It also comes in ready rolled sheets, both of which can be kept in the fridge for around a week. You can also buy the pastry from the freezer cabinets in the supermarkets or freeze the chilled pastry yourself. The pastry is labelled suitable for vegans and is Vegetarian Society approved also.

I find this pastry so versatile and it is great for baking tarts or making a quick pie for dinner. You can use it for sweet and savoury dishes. Jus-Rol is sold in all major supermarkets and many smaller grocery stores. It sells for around £1.50 per packet but is often on offer for £1 or 2 for £2.

Here are some of the dishes I have created using the pastry:

Puff Pastry Pizza

Puff Pastry Parcels

Vegetable Pot Pie

Mince Pies

Vegetable Pie

Lattice Mince Tarts

Jam Tarts
Come back tomorrow for a recipe using the Jus Rol puff pastry.

Let me know what you use your ready-made pastry for in the comments below.
