Vegan Vox Reviews...Cook & Survive! by The Vegan Zombie


I have been a fan of The Vegan Zombie's YouTube Channel for ages and was so excited when they announced the general release of their fan-funded cookbook/graphic novel - Cook &  Survive!
I ordered my copy from Amazon on the day of release and waited patiently for it to be shipped over from the US. When it finally arrived, I was not disappointed.

It features a graphic novel with Chris, Jon and Indy the dog fighting their way through a zombie apocalypse which is brilliantly illustrated by Rob Kramer and then a full cookbook featuring over 85 recipes.

There are The Vegan Zombie classics such as their legendary Mac'n'Cheese, Corn Dogs and Pizza. There are healthy recipes, salads, soups, pies, raw recipes, desserts, breakfast, side dishes, nut milks, sauces and even vegan dog food!

It is an American book, so a few ingredients are harder to find here in the UK, but mainly they use standard ingredients and obviously the measurements are in cups but they also put weight in brackets so no conversions needed.

So if you love home-cooked vegan variety, American favourites and want to treat your companion animal to some great vegan treats too, this is the vegan cookbook for you!

The Ordinary Vegan - Inside a vegan kitchen

Many new vegans or those contemplating becoming vegan wonder if you need to buy lots of new products or fancy equipment in order to live a vegan lifestyle. So this week's The Ordinary Vegan is a bit different. I am going to show you around my kitchen!







Let me start by saying that the only thing you need in a vegan kitchen is a good chopping board, a set of good knives, a cooker and lots of fresh vegetables, fruit, grains, seeds, pulses, herbs and spices. Everything else is a choice. I love kitchen gadgets and so have more than most, but I spend most of my time in the kitchen making food, photographing food or writing about it!

These are my store cupboard essentials:

A range of oils, spices, vinegars, seasonings, nutritional yeast and stock cubes.


A range of tinned produce, vegetables, beans, lentils, chopped tomatoes and a quick veggie chilli if I'm feeling too tired to cook.


I have a savoury and sweet snack cupboard with naughty vegan treats in like nuts, crisps, crackers and biscuits.


A huge pile of cookbooks for meal ideas and inspiration. These don't need to be vegan cookbooks, many recipes can be easily adapted for a vegan diet.


In my fridge, I always have some non-dairy milk and butter, usually some vegan cheese, salad and lots of sauces. There is usually a tub of leftovers in the fridge for a quick lunch and some Jus-Rol pastry for quick and easy pies. Ooh, there's always a bar of dark chocolate in my fridge for when only dark chocolate will do!




In my freezer, I always have my own vegan ready meals. I always cook in large batches and freeze portions for after a hard day at work. You will often find some dairy-free ice-cream, homemade bread rolls and a few vegan burgers or sausages in my freezer too along with some frozen vegetables.



Moving onto my kitchen gadgets. I have a blender for soups, smoothies and sauces. A radio to listen to whilst I'm cooking and washing up! :-)


A food processor for breadcrumbs, pesto, salsas, chopping nuts, seeds, onions, and to use in baking. 


A bread machine. I love my bread machine and I make all of my own pizza bases, bread rolls and loaves. Often I use the dough setting to do all of the kneading and mixing and proving and then bake in the oven for a lovely finish.


 A pestle and mortar - I use this to grind herbs and spices, make dips and grind seeds and nuts.


 The slow cooker is great for casseroles, soups, curries, stews and marinades.


Finally, a mixer. I do a lot of vegan baking in my kitchen and a good mixer makes light work of it!

Vegan Vox Reviews...Essential Vegan Cookbook by Vanessa Almeida


This week on VVR I am reviewing Essential Vegan Cookbook by Vanessa Almeida. On Tuesday, Vanessa shared her Chocolate Cheesecake recipe with us here at Vegan Vox Blog and this book is full of more delicious recipes which are just as simple and tasty.



Vanessa Almeida is an accomplished Brazilian vegan chef based in London. Vegan Recipe of the Week - Chocolate Cheesecake by Vanessa Almeida


This week's VROTW is not one of mine, it is from the Essential Vegan Cookbook by Vanessa Almeida. Vanessa kindly sent me a guest recipe for my blog and I will be reviewing her book on this Thursday's Vegan Vox Reviews.


Chocolate Cheesecake

Ingredients:

Base
• 13 vegan digestive biscuits crushed
• 1/2 cup vegan margarine melted
Filling
• 420g firm tofu
• 250g dark chocolate melted
• 6 tbsp unsweetened cocoa powder
mixed with 100ml water (blend it
together well to make a paste)
• 4 tbsp agave syrup
• 1 tbsp sugar
• 70g shredded almonds for topping

Method:

This “cheesecake” is so delicious that you won’t quite believe it’s vegan. A sophisticated dessert that melts in your mouth, it’s rich, chocolatey and rather heavenly. Indulge yourself!

Base
Grease an 8 inch round springform baking tray.
Crumble the biscuits in a food processor.
Mix it thoroughly with the melted margarine and spread the biscuit base mixture evenly across the baking tin, pressing it down firmly with your fingers.

Filling
Put the tofu in the food processor and blend it until smooth.
Add the rest of the ingredients one at a time and beat it until all the ingredients are nicely blended in.
Using a spatula pour the filling onto the base and sprinkle the chopped almonds on top of the cheesecake.
Cover with tin foil and place in the fridge overnight, or alternatively in the freezer for about 3 hours, before serving.
